SCHOOL LUNCHES

I wrote the story New Little person and have since come up against more problems with Charlotte. She now has to be gluten free, corn free, buckwheat free, potato free and colour free. My problem is I can't find a bread she likes and with school just around the corner, I am really worried about what to give her for school lunches. We are going to see a dietition at the end of Feb but what I need are good recipes and I doubt very much that she will be able to help us much. If anyone has any good bread recipes please let me know.

Many thanks Cheryl

Have you tried using rice papers. They're not very expensive, most supermarkets stock them and you simply dip them briefly into hot water and fill them with vegetable and or meat. Chicken and carrot sticks are often popular with children and you might like to add a little sweet chilli sauce. Also using rice noddles or rice and make a salad with what ever veg. meat your child likes and add their favourite dressing. Getting your child invovled with the making and choosing their own fillings and ingredients works well. There's plenty of nice containers around with their own fork attatched to pack a rice or rice noddle salad in. Good luck, Lee
