substituting gluten free all purpose flour in a recipe

I remember reading something about adding xanthan gum to baking recipes when substituting a gluten free flour for regular all purpose flour.

Is this always necessary when baking powder and/or baking soda already exists in the recipe?

This really depends on if it is a gluten free baking mix that you are using (that already has rising agents and binding agents in it.

v.s. using something like rice flour (without rising and binding agents.

Xanthan gum is a gluten substitute for glue'ing your products together.

A gluten free mix - may have another binding agent in it already.

Where as normal gluten free flour normall has no binding agent so you need to add something like xanthan gum - or gluten free gluten to your mix.
