This is my favourite mix. I like a moist cake, not too light and fluffy. This mix tastes more like my original baking with wheat flour. I used to bake a lot for my kids so it was a relief to find this mix.Its not cheap but definatly worth it.
I use Olivani margarine or rice bran oil and rice milk as I have to be dairy free as well. Also I use raw sugar not white. Plus our own eggs which means the cake will taste different if you use cheap eggs and white sugar.
