Tomato and Onion Tuna Bakes Potato Recipe

In an effort to eat less and exercise more I have been working on some quick and easy portion controlled lunch and dinners that are easy to have when traveling or at home.
This Baked potato is great for any meal.
You control how much you eat by choosing a larger or smaller potato.
Ingredients
* per person
1 x medium Potato
1/2 Cup of Shredded Baby Spinach
1 x Small Can of Tomato and Onion Tuna (drained)
1/2 C Coleslaw
A Sprinkling of Feta
Salt and Pepper to Season
Poke holes in the potato with a fork on either side and place in the microwave for 7-10 minutes (depending on the size of your potato).
Once Soft and cooked slice in half and score into the white fleshy part of the potato.
Top with the spinach, feta, tuna and microwave for a further minute.
Add the coleslaw then season with salt and pepper to taste.
