What is Potato Starch Flour?




I have a recipe book by Bette Hagman. I want to make her Banana Bread recipe (Gluten Free) and the recipe calls for Potato Starch Flour. Is Potato Starch Flour the same as Potato Starch? If not, where to I get the Potato Starch Flour? I looked on the Bob's Red mell website and it only lists Potato Flour. HELP - Thanking you in advance.

As far as I know potato starch and potato flour are both products... i guess the issue here is what did she mean - potato flour or potato starch.

I use potato flour mixed with other flours in my cooking, If i was you I would just replace this flour with a baking mix.

What is the difference between Potato Starch, Potato Starch Flour and Potato Flour?

Potato Starch and Potato Starch Flour are the same thing. However, Potato Starch (flour) and Potato Flour are different.

Potato Starch is a very fine flour with a bland taste, that is made by removing the potato peel, made into a slurry and watery mix, then dehydrated to form Potato Starch. The Potato Starch is not cooked, thus it does not absorb much water unless it is heated. For example, it will make an excellent gravy if heated with liquid in a saucepan.

Potato Flour is heavy with a definite potato flavor made from the actual potato including the potato skin and will absorb large amounts of water because it has been cooked and contains the peel. It is not used as main flour in baking as it would absorb too much liquid and make the product gummy. Small amounts are used to increase water, hold product together and so on.

Potato Starch...

Hey, I am a kiwi too and get confused by American recipes as I thought that Potato Starch was a different thing there.

What I have figured is that Potato Starch Flour is the Starch like fine powder that you get in the Asian stores etc. It's a flour, similar to corn (and you can substitute corn I think, if potato allergies an issue).

Potato Flour is like powdered instant potato mix, it's sort of squeaky if you rub in the bag and is used to add moisture. If you see it in recipes it is in much smaller quantities.

As there are different names for these two products the only way I seem to be able to tell is that if it's a small quantity is the dried potato like product that you use. I buy it from my local chinese grocery store.

Potato Starch Flour & Potato flour are slightyly different. Potato flour is slightly heavier than the starch flour so not as much is needed in recipes. I use potato starch as a general rule in my baking. If you are in Chch, Piko Wholefoods usually sell both.

I assumed it was the same thing but the best thing to do is email the Coeliac Society at coeliac@xtra.co.nz ( Web site, www.coeliac.co.nz) and they will be able to tell you or contact the Theurapeutic Data Base.

As the other respondent said I'd just use a baking mix if not sure.
