Gluten and flour are used in a number of food products due to their ability to make things stick together or "glue" together as the name gluten relates.

While you may find that not all cold cuts of meat do contain gluten, some may use rice, corn or tapioca, soy flours etc as a filled in their products.

If you are worried about gluten its easier to go for unprocessed meat. Always read the lables.

Also watch out for anything marinates... i find that patties, kebabs and steak seem to have wheat in them a lot of the time at my local supermarket
